Vegan Broccoli-cheese soup

Mine Own Recipe. I have discovered the cheese-like deliciousness of nutritional yeast flakes. you can use them in conjunction with olive oil and onion powder on popcorn to get a delicious buttered/cheese popcorn flavor. You can mix it with veg bullion, tamari and tomato paste to get a cheese-tomato sauce. This recipe is delicious (in my opinion) and I'm a conosseur of broccoli-cheese soups. (the best? Quiznos. Hands-down.) Anyway:

1 1/2 cups broccoli, chopped
1/3 cup onion, finely chopped
1 tb. tamari sauce
2 1/2 cups vegetable broth (I use the cube kind, but the powdered kind is also nice--make sure it's vegan if you want to keep your soup vegan).
1 1/2 tb. vegetable oil

Simmer these until the broccoli and onions are nice and tender. Blend in a blender for about a minute.

Then, put in:

1/2 cup nutritional yeast flakes (not brewers, although that might taste nice too, I dunno)
1/2 tsp paprika
and 1/3 cup vegenese.

Salt and pepper to taste.

:) :) It's good.

    I suppose that any non-leafy green veggie would go-- asparagus,celery (though that might taste odd),

    maybe potatoes???

    where do u buy all this? I was so excited to find vegan choc chips in Albertsons I embarressed hubby. I was just thinking how much I miss broccoli cheese soup and potato soup. Now that I know I'm allergic to the milk... it's a bummer. Still, I'm glad it was something easy like that!

  4. You can buy vegenaise in most health food stores-- it's basically vegan mayo.

    nutritional yeast flakes-- also health food store. (very cheap, too.)

    tamari sauce is basically soy sauce, so you can use soy, or you can buy tamari especially-- I think normal grocery stores would have it.

    I think that veg bullion is also available on the same isle of the grocery that has other broths. If not, it's in the health food store.

    another tip-- I've heard that you can add half a can of great white northern beans at the time of blending to make it creamier, if that's what you like.

  6. Excellent Recipe! I also added a 1/4 cup of raw cashews blended smooth with 3/4 cup of unsweetened silk soy milk. It makes it even more creamy!

    Your soup sounds good! I just wanted to save you and your viewers from Brewer's yeast. It will NOT taste good! I promise you. Please save your money and time. It's not the same thing. A lot of people confuse the two.

  8. After trying it with Brewer's yeast, I have to agree with Pamela. Not very compatible... kind of sour/sickly sweet yucky taste. Nutritional Yeast is the way to go!!
