KETO FUDGE TRACKS ICE CREAM
1 can of full-fat coconut milk
2/3 cup dutch cocoa powder
1 cup monkfruit sweetener powder
1 tsp stevia powder
2 tsp pure vanilla extract
Melt these together over low heat, stirring frequently.
1 quart heavy whipping cream
whip with hand mixer on highest setting until it begins thickening, but isn't frothy, giving it breaks every few minutes.
add 8 egg yolks, stir in thoroughly.
add the melted chocolate concoction when it has cooled enough not to cook the egg yolks, stir in gradually and carefully. Add another pinch of stevia powder to entire mixture, mix in.
Pour into flat pan.
My mix ins:
1) "Keto" chocolate-- 2 tbs coconut oil, 1 tsp cocoa powder, 1 tb monkfruit sweetner
PB fit powder--2 tbs
heavy cream--2 tbs
melt and mix together. Add to the ice cream in dollops, stir loosely.
2) about 60 Guittard Extra Dark chocolate chips, softened for 30 seconds in the microwave, scatter over the top, stir in loosely.
Set to freeze in the freezer for four hours.
let thaw a little before scooping.
One recipe yeids 6 1-cup servings (or 12 1/2 cup servings).
